In the heart of Charlotte, North Carolina, Colombian immigrant Manolo Betancurowner of the beloved Manolo’s Bakery, the oldest Latino spot in the Carolinashas been sprinkling joy like sugar dust for 12 years by baking and delivering free birthday cakes to folks experiencing homelessness. Teaming up with Raise You Up Ministries, his crew whips up simple vanilla sheet cakes (sometimes jazzed with caramel or peaches) to celebrate those often-forgotten special days, because as Manolo warmly says, "They're our neighbors."
